This easy recipe is great for a healthy snack or a side to your meal. Either way will have you going back for seconds!
-4 to 5 medium sweet potatoes
– 1 tsp olive oil
– ½ tsp garlic powder
– ½ tsp paprika
-sprinkle salt (optional)
- Wash and peel potatoes.
- Pat them dry with paper towel. Cut each potato in quarters and dice into cubes.
- In a plastic resealable baggie, add the potatoes, spices and olive oil. Shake until potatoes are all coated, about 1 minute.
- Pour potatoes out of the plastic bag onto a baking tray with aluminum foil.
- Bake at 375⁰ F for 40 minutes, or until golden brown. (During the last 2 mins I like to put mine on broil to get extra crispy!)
- Let cool and enjoy!
